When Wes came home from church on Sunday, I was cooking. He didn't quite know what to think. It's because I've stumbled upon a fantastic recipe blog: Skinny Taste. You should check it out!

I can't recommend Gina's baked potato soup recipe highly enough. I only wish I had doubled it, because it didn't make very much! I couldn't really taste the cauliflower... and I should mention that I'm pretty impressed with myself for steaming cauliflower. {I know it's pathetic, but let's be honest: never have I ever even bought cauliflower, never mind knowing out how to cook it!}



















Wes said it was kind of bland, but I think that's the nature of baked potato soup. I was fine with sea salt & black pepper. He added paprika and crushed red pepper and said it was much better. To each his own. :)

I've already pinned several recipes from ST that I want to try, and I know my pin board will continue to grow as I pour over her blog looking for yummy {and light} recipes. If you stumble upon one you particularly love, you'll have to let me know!

That looks really yummy. I've never been a huge baked potato soup fan because they are always too heavy. Maybe I'll try this one for a lighter feel.

We had baked potato soup last night. :) I will have to try this recipe; it would be good to get in some cauliflower, especially since I can't stand the texture of it on its own. I suppose this sort of defeats the purpose as far as a "skinny" recipe, but adding a little bit of bacon helps a lot with flavor...really I suppose you could add anything you would actually put on a baked potato and it would be good. :)
